Frozen dinner rolls OR 16 Frozen Texas rolls, semi-thawed 1/2 package Butterscotch pudding mix (about 1/3 cup, non-instant) 1/2 cup Brown sugar 1/2 cup Butter or margarine 1/2 cup Chopped pecans Non-stick cooking spray Spray bundt pan with non-stick cooking spray. Cut rolls in half and dip in pudding mix. Arrange rolls in bundt pan. Alternately arrange dough and sprinkle with pudding mix and pecans. Sprinkle remaining pudding mix and pecans over the top. Combine brown sugar

until crisp and brown (about 10 minutes), turning frequently and basting with drippings. Serve with warm grapefruit catsup as a dip. SPICY SQUID IN BEER, TEXAS STYLE 8 servings Source: Texas Greats 1 lb. Small squid 1/4 cup Olive oil or corn oil 3 Onions; peeled, sliced 1/4 cup Vinegar 1/2 cup Lone Star or Pearl Beer 2 Cinnamon sticks 4 Whole cloves 1 Bay leaf Salt & freshly ground pepper Wash and clean the squid, separating the outer sacs from the heads and

uncovered, over low heat until the squid are tender and all the beer has been absorbed, approximately 1 to 1 1/4 hours. Remove the spices and bay leaf. Cut the squid into bite-sized pieces and serve warm or cold. SPICY TEXAS BARBEQUE SAUCE 10 servings Source: Texas Greats 1 cup ketchup 1/2 cup brown sugar, firmly packed 1/4 cup lime juice 2 tablespoons ground red chilies 1 tablespoon vegetable oil 1 tablespoon Worcestershire sauce 1 1/2 cups chopped onion 2 jalapenos,

sauce Pick over and sort the peas well for clods and rocks. Wash well, then parboil in water to cover for two minutes, then let sit one hour. Pour 31 Chapter 2: N-Z off parboiling water. Add water to cover again, and cook until peas are tender. Mix with remaining ingredients; refrigerate. If desired, add chopped ham just before serving. Serve as a dip or a salad.
